Homemade Baingan ( Brinjal) Fry Recipe
Ingredients:
1 big bharta Brinjal (with less an small seeds)
1 tsp red chilli powder
1 tsp chaat masala
1/2 tsp jeera (cumin ) powder
1 tsp amchur (mango powder)
some coriander leaves for garnishing
Method:
Wash and cut the brinjal into 1/4 inch round disc.
Coat them with turmeric and salt and keep aside for 10-15 minutes.
Mix all the above dry spices together and keep aside.
Gently wash the cut brinjals with water and dry pat them .
In a pan heat 3-4 tsp of oil and place one by one the brinjals on it .
Cook on medium flame for 2-3 minutes. Before turning sprinkle some masala over it.
Flip the brinjal and cook on the other side also till it is brown and slightly crispy on both sides. Sprinkle some masala.
Remove in a serving dish and garnish with coriander leaves,
Serve as a side dish with chapati, parathas or puris.
