Homemade Bharwa Baingan Recipe

Ingredients for stuffing :

  • 12 small light purple baingan (brinjals)

  • 3 tbsp peanuts

  • 1 tsp turmeric powder

  • 1/2 tbsp chilli powder

  • 1 tsp jeera (cumin seeds)

  • 2 tbsp coriander seeds

  • 3 tbsp sauf (fennel seeds )

  • 1/2 tbsp amchur (mango powder )

  • salt as per taste

Ingredients for Gravy :

  • 3 big onions finely chopped

  • 4 big tomatoes pureed

  • 1 tbsp ginger and garlic paste

  • 1/4 tsp asefodita

  • 1 tsp jeera (cumin seeds)

  • 1 tsp turmeric powder

  • 1 tsp chilli powder

  • 1/2 tsp garam masala

  • salt as per taste

  • chopped coriander leaves for garnishing

Method :

  1. Dry roast the peanuts, jeera, corainder seeds and sauf. Allow it to cool.

  2. In a grinder add all the roasted and the remaining stuffing ingredients. Grind them into a fine paste.

  3. Wash the brinjals and make a slit horizontally and vertically in all of them. Soak them in salt water for 10-15 minutes.

  4. Remove the brinjals from water and dry pat them .Fill them with the stuffing masala slowly pressing it inside.

  5. Take a pan heat 2-3 tbsp oil and place the brinjals one by one. Cover and cook on low flame on both sides till it is soft but do not overcook them.

  6. Remove in a plate and keep aside.

  7. In the same pan heat 1-2 tbsp oil add the asefodita and jeera when it splutters add the ginger garlic paste cook for a minute then add the turmeric, onions and cook till it is pinkish in colour. Add the tomato purée and again cook till oil leaves its sides.

  8. Add all the remaining ingredients of the gravy along with the brinjal. Add one cup water then cover and cook for 5-10 minutes.

  9. Remove in a serving bowl and garnish with coriander leaves.

    Serve this yummy sabzi with rice or paratha.
