Homemade Kamal Kakdi Sabzi Recipe

Ingredients:
400 gms kamal kakdi ( lotus stem)
3 nos chopped onions
4 nos tomatoes puree
1/2 tbsp chopped ginger
1/2 tbsp chopped garlic
1 chopped green chilli
3-4 strings chopped curry leaves
1/4 tsp asefodita
1 tsp jeera ( cumin seeds)
1 tsp turmeric powder
1-2 tsp chilli powder
1/2 tbsp coriander powder
1 tsp garam masala
salt as per taste
some chopped coriander leaves
Method:
Peel, wash and cut the kamal kakdi into round or oblique medium size. If it is still filled with dirt then soak them in hot water for 10 minutes. Drain the water and keep aside for future use.
In a pressure cooker heat 3 tbsp oil add the jeera when it splutters add the asefodita then saute the garlic, ginger and curry leaves. To it add the onions and green chilli and cook on low flame till soft then add the tomato puree and cook on low to medium flame stirring at intervals till oil drops are seen on the sides. Add all the spices, salt and kamal kakdi and cook for 1-2 minutes then add 4 cups water and give it a stir. Close the cooker and cook on medium flame for 20 minutes or till the kamal kakdi are cooked.
Open the cooker once the pressure is released. Adjust the gravy consistency accordingly by adding water.
Remove in a serving bowl and garnish with some chopped coriander leaves.
Enjoy this healthy and yummy sabzi with chapati or paratha.
