Homemade Lauki ( Bottle Gourd) Ki Sabzi Recipe
Ingredients:
500 gms lauki ( bottle gourd)
1 green chilli chopped finely
1 tsp ginger chopped finely
a pinch of asafoetida
1 tsp jeera (cumin ) seeds
1 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp jeera (cumin ) powder
salt as per taste
some coriander leaves for garnishing
1 tsp lemon juice
Method:
Peel , wash and cut the lauki into cubes.
In a pressure cooker heat 2-3 tsp ghee add asafoetida and jeera when it splutters add the ginger and green chilli then saute.
Add the chopped lauki and cook for 2-3 minutes.
Add all the remaining spices leaving out the garam masala and mix well. Add 2 cups water.
Close the pressure cooker lid and cook on medium flame for up to 4 whistles.
Once the pressure is released open the pressure cooker mix well and add garam masala and water only if required.
Remove in a serving bowl and garnish with coriander leaves and lemon juice.
Serve this healthy sabzi with chapati or paratha.
