Homemade Mediterranean Salad Recipe

Ingredients:
1 tin/ can chana / chickpea
1.5 cups mixed lettuce /salad leaves
1 no cucumber
6-7 baby tomatoes
1 small finely sliced onion
2 tbsp black or green olives
1/4 cup cooked quinoa (optional)
1/4 cup pesto sauce
1 tsp pepper powder
salt as per taste
Method:
Open the tin then drain and wash the chana under running water. Keep aside for future use.
Wash the salad leaves, cucumber and tomatoes. Chop the salad leaves roughly and the tomatoes into half and cucumber into half moon shape.
Clean, wash and cook the quinoa till each grain is separate.
In a bowl add all the chopped tomatoes, onion, cucumber, salad leaves, olives, washed chana , quinoa , salt, pepper and the pesto sauce. Give it a good toss.
