Homemade Namak Para Recipe
Ingredients:
4 cups maida
1/4 cup oil
1 tsp ajwain ( carom ) seeds
salt as per taste
oil for deep frying
For Masala: ( optional )
1/2 tbsp chilli powder
1/2 tbsp chaat masala
Method:
In a bowl mix the maida, salt and ajwain. Add the oil and mix till it forms a texture like bread crumbs. Add little water at a time to make a stiff dough.
Cover and allow it to rest for 30 minutes.
Knead the dough once again to form a smooth ball. Make four parts of the dough ball.
Take one ball and place it on a rolling board and roll into half inch thickness chapati. Cut into square pieces and keep aside for future use.
Repeat the process till all the dough balls are used.
Heat some oil in a kadai when the oil is hot lower the flame and add the cut square pieces in small batches. If they stick to each other separate them with the back of the spoon. Fry on low flame till crispy and golden brown. Remove on a kitchen towel.
Add all the fried namak para in a bowl and mix the chill powder and chaat masala in it.
When cooled store in an airtight container upto 3-4 weeks.
