Homemade Pesto Grilled Veg Sandwich Recipe

Servings: 6 sandwiches

Total Time: 30 minutes

Ingredients:

  • 12 white/ wholemeal/ multigrain bread

  • 1 /2 cup homemade basil pesto sauce

  • 1 sliced into round yellow capsicum/pepper

  • 1 sliced into round red capsicum/pepper

  • 1 sliced into round white onion

  • 1 sliced brinjal

  • some chopped lettuce leaves

  • some salt & pepper powder

Method:

  1. Wash and slice all the above veggies in round medium size rings. Chop the brinjal into long slices.

  2. Take a non stick pan and grease it with 1 tbsp olive oil or any other refined oil. Place the sliced capsicum on it then sprinkle some salt and cook on medium flame till slightly soft but firm and crunchy . Similarly do the same for the onions and brinjal. Keep all the veggies for future use.

  3. Take one slice of bread and spread the pesto sauce all over it . Similarly do for all the bread slices.

  4. Take a slice of bread place some chopped lettuce leaves over it then place some onions on it then some capsicums and brinjal. Sprinkle some salt and pepper. Place another bread slice over it.

  5. Take a sandwich griller and place the sandwich on it with some butter. Grill till brown on both sides.

  6. Repeat the process till all the sandwiches are made.
