Homemade Pudina Lachha Paratha Recipe

Ingredients:
1 big bunch pudina ( mint ) leaves
3 cups wheat atta
1 tsp jeera (cumin ) seeds
1/4 tsp asefodita
1/2 tsp turmeric powder
1 tsp chilli powder
1/2 tsp jeera (cumin) powder
1 tsp chaat masala
salt as per taste
oil for cooking
Method:
Pluck the pudina leaves from the stem. Wash and allow it to dry. Then chop it finely.
In a bowl add the atta, chopped pudina and all the dry spices. Mix and add water little by little to make a semi soft dough.Allow it to rest fro 10 minutes.
Grease your palms with a little oil and knead the dough once again to form a smooth dough.
Make equal size balls with the entire dough.
Dust some flour on a rolling board and roll one dough ball into a thin round chapati . Brush the entire chapati with some oil then sprinkle a little wheat flour all over it.
Start creating pleats by folding with the help of fingers. Stretch the pleats as much as possible.Then start rolling the pleated dough like a swiss roll. Press the ends gently.
Repeat the process till all the dough balls are made into swiss rolls.
Take one ball and with a rolling pin roll gently roll into a medium thickness paratha.
Heat a tawa and place the rolled paratha on it. Cook on both sides by applying oil till brown spots are seen on it .
Remove and keep on a plate. Then crush the paratha with your palms to form layers. Repeat till all the parathas are cooked.
Serve this delicious paratha with curds and pickle.
