Homemade Pumpkin Soup Recipe
Ingredients:
1 kg pumpkin
1 big onion
1 bay leaf
8-10 whole pepper
1 -2 green chilli
1 inch ginger piece
1 tbsp chopped garlic
salt as per taste
1/2 cup coconut milk powder
Method:
Peel, wash and chop the pumpkin, ginger and onion into big pieces.
Take a pressure cooker add 2-3 cups water and all the above ingredients without the coconut milk . Cook upto 3 whistles.
When the pressure is released open the cooker and allow the mixture to cool.
In a grinder jar grind the mixture into a smooth paste.
Make a paste of the coconut milk powder by adding a little water and then add it to the pumpkin soup .
Take a boil and add water only if required.
Remove in serving bowls and garnish with some fresh cream and pumpkin seeds.
Enjoy this yummy and healthy soup.
