Homemade Quinoa Veg Fried Rice Recipe

Ingredients:
1/2 cup quinoa
2 cups water
1 small onion chopped finely
1 small carrot chopped finely
6-8 french beans chopped finely
1 small green capsicum chopped finely
1 tsp white pepper
2 tsp soya sauce
2 tsp white vinegar
salt as per taste
some chopped spring onion leaves for garnishing
Method:
Take a sieve with small holes add the quinoa and wash it well under the tap.
Boil 2 cups water in a pan. Then add the washed quinoa. Cover and cook on low flame stirring at interval till it is soft and all the water dries. Remove from flame and keep it covered for another 5 minutes. Remove the cover and mix with a fork so that the each grain is separate. Keep aside for future use.
Heat a pan with 2 tbsp oil add the chopped onions and cook on high flame till pinkish in colour then add the chopped beans and carrot and again cook for 2-3 minutes on high flame . Lastly add the chopped capsicum and cook for a minute. Then add the soya sauce, vinegar, salt and white pepper and give it a good toss. To it add the cooked quinoa and again cook on high flame for a minute.
Remove in a serving dish and garnish with some chopped spring onion leaves.
