Homemade Ragda Pattice & Tikkis Recipe
Ingredients for Ragda:
2 cups vatana ( dried yellow peas)
1 big onion chopped finely
2 big tomatoes chopped finely
2 green chillies chopped finely
1/2 tbsp ginger chopped finely
1 /2 tbsp red chili powder
1 tsp turmeric powder
1 tsp jeera powder (cumin powder)
2 tbsp oil
salt to taste
Method:
Pressure cooker the vatana with salt and turmeric powder for 10 minutes or upto one whistle .
Take a pan heat oil then add the ginger, green chilies and onions , cook till translucent then add the chopped tomatoes and dry spices cook till oil is seen on the sides of the pan.
Then add the cooked vatana along with the water and cook for another 5 minutes, If it is too thick add some more water or as required.
Ragda is ready.
Ingredients for Pattice: 20-25 nos
6-7 big boiled potatoes
salt to taste
rice flour for dusting
pure ghee or oil for shallow frying
Method:
Peel the boiled potatoes and mash it to form a smooth fine paste.
Add salt and roll into round pattice / tikkis
Dust the pattice/ tikkis with some rice flour so that it does not open up and remains crispy.
Take a heavy non stick pan , heat 3-4 tbsp pure ghee and place one by one the tikkis on it. Cook on medium to low flame till the tikkis are crispy and golden brown on both sides.
For Garnishing:
1 big onion chopped finely
red garlic chutney
chaat masala
some chopped coriander leaves
raw mango cut finely (optional)
For Plating:
Take a serving plate/dish place 2 pattice/ tikkis on it then pour ragda over the pattices.
Garnish it with some onions, green chutney, sweet chutney and red garlic chutney. Sprinkle some chaat masala, chopped coriander leaves and raw mango.
Alternatively you can also flatten the Pattice and make it very crispy and eat it like tikki with a choice of your chutney and lots of chaat masala.
