Homemade Russian Salad Recipe

Homemade Russian Salad Recipe

Course : Appetizer

Servings: 5 pax

Prep Time: 10 minutes

Cook Time : 5 minutes

Total Time: 15 minutes

Ingredients:

  • 1 cup chopped potatoes

  • 1/2 cup chopped carrots

  • 1/2 cup chopped french beans

  • 1/2 cup peas ( fresh/frozen)

  • 1/4 cup chopped pineapple

  • 1/2 cup hung curds/yogurt

  • 1 tsp pepper powder

  • salt as per taste

Method:

  1. Take 500 gms curds and in a muslin white cloth hang it overnight so that all the water /whey comes out. The whey can be use to make chapati /paratha dough.

  2. Peel, wash the potatoes and carrot and dice them into small cubes. String the beans from both the sides then wash and dice it also into small cubes.

  3. Take some water in a vessel and on a stand place a sieve . Keep all the chopped vegetables and the peas on the sieve. Sprinkle some salt all over the vegetables. Cover and steam on high to medium flame for 5 minutes or till the vegetables are soft. Do not over cook them. Remove the sieve and allow the vegetable to cool.

  4. In a bowl add all the cooked/steamed vegetables, chopped pineapple, pepper and salt. Mix well then add the hung curds and again give it a good toss.

  5. Remove in a serving bowl and serve chilled.

Enjoy !!!!

Note: If the salad becomes too dry 2-3 tbsp of fresh cream can be added. Alternatively instead of hung curds you can also use mayonnaise.
