Homemade Shaam Savera Kofta Recipe
Ingredients :
For Kofta:
3 bunches palak (spinach)
1/2 tsp chopped garlic
3 tbsp cornflour
oil for frying
For Kofta Filling:
1 cup grated paneer
1 chopped green chilli
1/2 tsp chopped ginger
1/2 tsp pepper powder
salt as per taste
For Kofta Gravy:
2 big onions chopped into big pieces
3 tomatoes chopped into big pieces
1 green chilli chopped into big piece
1/2 tbsp ginger chopped into big pieces
1/2 tbsp garlic chopped into big pieces
1/2 tbsp chilli powder
1 tsp jeera (cumin) powder
1 tsp garam masala
2 tbsp kasuri methi
salt as per taste
1/2 cup cream
Method :
Clean and wash the palak thourghly.
Blanch the palak (TIP# 3) and then squeeze all the water from it.
In a pan heat 1 tsp oil add the garlic saute for few seconds then add the spinach and cook on low flame till it is completely dry.
Let it cool then grind to a fine paste without adding any water.
Mix the cornflour in the palak purée with a little salt and make a dough. Keep aside.
Add all the ingredients of the kofta filling to the grated paneer and make small round balls.
Pinch a little palak dough and flatten it enough to place the paneer ball into it and then bring all the sides of the dough together to cover the paneer. Similarly do it for the entire dough.
Keep the spinach balls in the fridge for an hour so that it does not break at the time of deep frying.
Heat some oil for deep frying and fry all the koftas one by one on low flame till it is brown on both sides.
Cook the chopped onions, tomatoes, chilli, ginger and garlic in 2 cups of water till it is soft and mushy and the water dries. Allow it to cool.
Take a grinder add the cooked onion tomatoes and grind finely. Sieve it to get a smooth paste.
Heat 2 tbsp oil then add the tomato onion paste, then add all the dry spices of the gravy ingredients and cook for about 5-10 minutes till oil leaves the sides of the pan.
Add the cream to it and cook for another 3-4 minutes.
Pour the gravy in an open mouth serving dish.Cut the koftas into halves and place them on the gravy topped with drops of cream.
Serve this yummy and tasty Shaam Savera with naan or bread kulcha.
