Homemade Soya Aloo Sabzi Recipe

Ingredients:
1 big boiled potato/aloo
1/3 cup soya chunks
1 small chopped onion finely
1 chopped green chill
1 tsp chopped ginger
1/4 tsp asefodita
1/2 tsp jeera/cumin seeds
1/2 tsp turmeric powder
1 tsp chilli powder
1/2 tsp coriander powder
1/4 tsp garam masala
1/4 tsp jeera /cumin powder
1 tsp kasuri methi/ dried fenugreek leaves
salt as per taste
some chopped coriander leaves
Method:
Boil, peel and cut the aloo into big cubes.
Boil some water in a vessel with a little salt then switch off the gas and then add the soya chunks . Cover and keep for 5 minutes then drain out all the water and squeeze out all the extra water from all the soya chunks and cut them into half.
In a pan heat 2 tbsp oil then add the jeera when it splutters add the asefodita. Saute the ginger then add the chopped onion , green chilli and cook till translucent. Add the turmeric and stir then add the soya, aloo, salt, kasuri methi and all the spices. Stir then cover and cook for another 5 minutes.
Remove in a serving dish and sprinkle some chopped coriander leaves.
Enjoy this yummy sabzi with chapati.
