Homemade Steamed Bao Buns Recipe
Ingredients for Bao Buns:
3 cups white flour (maida)
3 tsp instant yeast
1/2 tsp baking powder
3 tbsp butter
3 tbsp milk powder
1 tsp salt
3 tsp sugar
2 cups water in total (approximate )
Ingredients for Bao Buns Filling:
2 cups paneer (frozen/ fresh )
2 onions chopped finely
1 tbsp ginger & garlic paste
1 green capsicum chopped into long
1 tbsp schezwan sauce
1/2 tsp pepper powder
1 tsp kashmiri chilli powder
salt as per taste
Method:
Take one cup lukewarm water add sugar and yeast. Cover and let it rest for 10-15 minutes or till it rises or froths.
Sieve the flour and put it in a bowl add salt, milk powder and baking powder and mix well. Make a well in the center of the flour and then pour the yeast mixture. Knead into a sticky dough by adding little water at a time .Rub the butter into the dough and again knead it for 10-15 minutes till a soft and smooth dough is ready. Cover and keep in a warm place for an hour.
For the Bao buns filling in a pan heat 2 tbsp oil saute the ginger garlic paste then add the onions cook till it is translucent. Add the schezwan sauce, pepper, chilli powder and salt cook for a minute or two then add the capsicum and paneer. Mix well and cook for 5 more minutes. Remove from flame and keep aside.
In a steamer or vessel boil some water to steam the Bao Buns.
After an hour the dough will double in size. Pat it to remove the extra air. Divide into 4 parts .Take one part and cover the remaining.
Dust some flour on a clean surface or rolling board and roll the dough into a round medium size disc. With a cookie cutter or katori cut into round shape. Brush some butter lightly on it and put a piece of parchment paper into it and fold it.( see image 4 below)
Simiraly do it for the entire dough. Let them rest for another 20-30 minutes. Then place the bao buns on a plate and steam it for 15 minutes.
Remove in a serving plate and place some paneer filling in between the bao.
