Homemade Sweet Corn Vegetable Soup Recipe
Ingredients :
1 cup american sweet corn can (tin) or fresh
1/2 cup carrot chopped into small cubes
1/2 cup french beans chopped into small cubes
1/4 cup spring onions with leaves chopped into cubes
1 tsp chopped ginger
1 tsp chopped garlic
1 chopped green chilli
1 tsp black pepper powder
1/2 tsp white pepper powder
salt as per taste
1 tbsp white vinegar
1/2 tbsp soya sauce
2 -3 tbsp cornstarch
1 litre water
Method:
Drain the sweet corn from the tin and boil it in one litre of water for about 5 minutes. Remove the corn and keep the water aside for future use.
Remove 3 tbsp of sweet corn aside. In a grinder jar grind the remaining sweet corn into a fine paste and then sieve it.
In a pan heat 1 tbsp oil then saute the garlic, ginger, spring onions ( without leaves) and green chilli for few seconds. Then add the chopped beans and carrots and saute till crunchy but soft. Add the leftover water ,corn paste, whole sweet corn, both the pepper powders, salt, vinegar and soya sauce. Mix and let it simmer for 5 minutes. Prepare a watery paste of the cornstarch and slowly add in the soup. Cook stirring continuously for another five minutes till it is a soup consistency.
Remove in a serving bowl and garnish with some chopped spring onion leaves.
