Homemade Veg Tawa Sabji Recipe
Ingredients:
250 gms okra or Bhindi
250 gms Bitter gourd or Karela
250 gms Potatoes
250 gms Colocasia or Arbi
250 gms Green Peppers
250 gms Paneer
250 gms Brinjal
250 gms Cauliflower
250 gms Onions.
Ingredients for the Masala
8-9 nos tomatoes
1 tbsp chopped ginger
5-6 chopped green chillies
1 tbsp red chilli powder
2 tbsp coriander powder
1 tbsp fennel powder
1 tbsp garam masala
salt to taste
Method:
Cut all the above vegetables in thick long shape and shallow fry them.
Heat oil in a pan then add the chopped ginger and chilies saute for a minute or two then add the tomatoes. Cook for 5-10 minutes till soft and mushy add salt, red chilli powder, coriander powder, fennel powder and gram masala. Cook till oil oozes from it. Keep aside.
On a big tawa place all the shallow fried vegetables as shown in the below image keeping enough space in the center of the Tawa.
Switch on the gas and in the center put some masala and to it add the choice of your vegetables, cook for some time, if required you can sprinkle some water the masala is too dry.
Serve with puri, chapatis or naans
