Homemade Aloo Spring Onion Sabzi Recipe

Ingredients:

  • 6 small boiled potatoes

  • 2 spring onion bunch

  • 1 onion chopped finely

  • 1 green chilli chopped

  • 1 tsp ginger chopped

  • 1/4 tsp asefodita

  • 1 tsp jeera (cumin seeds)

  • 1/2 tsp turmeric powder

  • 1 tsp chilli powder

  • 1 tsp coriander powder

  • 1/2 tsp jeera (cumin) powder

  • 1/2 tsp garam masala

  • salt as per taste

  • some chopped coriander leaves for garnishing

Method:

  1. Boil, peel and chop the potatoes into big cubes.

  2. Clean, wash, dry pat and cut the spring onions finely .

  3. In a pan heat 2 -3 tbsp oil add the asefodita then jeera when it splutters add the green chill, ginger, turmeric and the chopped onions. Cook till the onions are translucent then add the chopped potatoes and all the remaining spices. Mix well and cook for 5 minutes on low flame.

  4. Switch off the flame and then add the chopped spring onions . Mix well and keep it covered for few seconds.

  5. Remove in a serving bowl and garnish with coriander leaves.

Serve this delicious sabzi with chapati or paratha.
