Homemade Achari Bhindi Recipe

Ingredients For Bhindi Coating :
500 gms small & thin bhindi/okra/ ladyfinger
1/2 tsp turmeric powder
1 tsp degi chilli powder
salt as per taste
Ingredients For Sattu Mixture:
3 tbsp sattu or roasted gram flour/ besan
2 tbsp mango pickle
2 tbsp pickle oil
1/4 cup chopped coriander leaves
1/2 tbsp chilli powder
1/2 tbsp coriander powder
1 tbsp amchur/mango powder
Ingredients For Achari Bhindi :
2 nos sliced onions
1 no chopped green chilli
1 tsp jeera/cumin seeds
1 tsp rai /mustard seeds
1 tsp sauf/fennel seeds
1/2 tsp methi/fenugreek seeds
1/2 tsp kalonji/ nigella seeds
Method:
Wash and dry pat all the bhindi properly. Cut the top and tail of all the bhindi and then slice them vertically into half. Coat them with turmeric, chilli powder and salt and keep aside for future use.
In a heavy based vessel heat 5 -6 tbsp mustard oil till smoking point. Switch off the gas and add the jeera. rai, methi, kalonji and sauf then switch on the flame and when the spices splutter add all the sliced onions and green chill and cook on low flame till light golden in colour.
Add the chopped bhindi in the onions and cover and cook on low flame stirring at intervals till soft then add the sattu mixture in it and stir well. Cook for another 2-3 minutes.
Remove in a serving bowl and garnish with some chopped coriander leaves.
Enjoy this spicy and tangy bhindi with chapati or parathas.
