Homemade Baked Vegetables Recipe
Ingredients:
1/2 cup french beans cut into long pieces
1/2 cup corn (frozen)
1/2 cup peas ( frozen)
1 big potato boiled and cut into big cubes
1 cup assorted capsicum/peppers cut into cubes
1/2 cup mushrooms cut into big cubes
1/2 cup steamed broccoli florets
1/2 cup baby corn cut into big cubes
1 cup boiled macaroni
1tsp oregano
1 tsp basil
1 tsp thyme
1 tsp chilli flakes
salt as per taste
1 cup mozzarella cheese grated for garnishing
Ingredients for white sauce:
3 tbsp white flour (maida)
3 tbsp butter
750 ml milk
2 tsp garlic chopped ( optional)
1/2 tsp chili flakes
1 tsp pepper powder
1 tsp oregano
1 tsp basil
1 tsp thyme
1/2 cup cream
salt to taste
Method:
In a pan heat the butter, saute the garlic and roast the maida on low flame till it is cooked.
Slowly on low flame add the milk so that no lumps are formed then add all the remaining ingredients for the sauce and cook for 5-10 minutes till you get a smooth thick sauce. Keep aside.
In a heavy based vessel heat 2-3 tbsp olive oil then add the chopped french beans saute for 2-3 minutes. Add the baby corn, mushroom and capsicum saute till soft but crunchy.
Add all the other remaining vegetables, macaroni, salt, chilli flakes, oregano, basil and thyme saute for a few minutes.
Pour the white sauce on the sautéed vegetables and cook till it is thick.
When it is cooled pour it in a baking tray and spread the mozzarella cheese over it.
Bake it at 180 C for 10-15 minutes or till the cheese melts and is brown.
Serve this delicious cheesy baked vegetables with garlic bread.
