Homemade Beetroot Paratha Recipe

Ingredients:
500 gms boiled beetroot
3 cups multigrain/ wheat flour
1/4 tsp ajwain/carrom seeds
1 tsp garam masala
1-2 nos chopped green chillies
salt as per taste
oil for cooking
Method:
Wash properly the beetroots . Take a pressure cooker add all the washed beetroots with some water. Cook upto 4 whistles.
Once the pressure is released open the cooker and remove all the beetroots.
Allow it to cool then peel and chop into big pieces.
In a grinder jar add all the boiled beetroots and make a puree without adding any water.
In a bowl add the flour, salt, ajwain, garam masala, green chillies and beetroot puree. Mix and make a smooth medium soft dough. Add water only if needed.
Make equal size balls of the entire dough. Cover and keep aside.
Take a dough ball dust some flour and roll into a small disc. Apply some oil all over it then fold the edges to form a square shape as shown in the below image 3. Dust some flour again on it and roll into a small square shape paratha. Alternatively you can roll into a round or triangle shape paratha also.
Heat a roti tawa then place the rolled paratha on it. Cook on both sides by applying oil till light brown spots are seen all over it. Remove on a plate.
Repeat the process till all the dough balls are used up.
Enjoy these healthy and yummy parathas with some yogurt and pickle.
