Homemade Drumstick Curry with Coconut Milk Recipe

Ingredients:

  • 2 drumsticks

  • 1 onion chopped long

  • 1 tomato chopped finely

  • 1 green chilli chopped finely

  • 1 tsp garlic chopped finely

  • 2-3 string curry leaves chopped finely

  • 1 cup coconut milk

  • 1 whole red chilli

  • 1 tsp mustard seeds

  • 1/2 tsp turmeric powder

  • 1 tsp chilli powder

  • 1 tsp coriander powder

  • salt as per taste

Method:

  1. Peel, wash and chop the drumsticks into 2-3 inches long pieces.

  2. In a pan heat 1 tbsp oil add the mustard seeds when it splutters add the whole red chilli, curry leaves, onions, green chilli and turmeric.

  3. Cook the onions till soft and translucent.

  4. Add the tomatoes, chilli powder,coriander powder and salt.

  5. Cover and cook till soft and mushy.

  6. Add the chopped drumstick with 2 cups water.

  7. Cover and cook on low flame till the drumsticks are soft and fully cooked.

  8. Add the coconut milk and simmer it on low flame for 5 minutes.

  9. Remove in a serving bowl.

Enjoy this yummy curry with rice.

Note: To make Coconut milk add 1/2 cup coconut milk powder to 1 cup water and mix well.
