Homemade Healthy Vegetable Upma Recipe
Ingredients:
1 cup rawa/sooji (semolina)
1 small carrot chopped into cubes
1 small green capsicum chopped into cubes
1/2 cup green peas (frozen)
1/2 cup french beans chopped into half inch pieces
1/2 cup cabbage chopped into small cubes
1/4 cup grated fresh coconut
1 tbsp chopped ginger
1-2 chopped green chillies
2 whole red chilies
1 tbsp urad dal
1 tbsp chana dal
1 tsp sugar
1 cup buttermilk
2 cups water
1/2 tbsp mustard seeds
2-3 string curry leaves
some chopped coriander leaves
salt as per taste
2 tbsp ghee
2 tbsp oil
Method:
Clean and wash both the dals. Dry pat and keep aside.
In a pan heat 1 tbsp oil add the mustard seeds when it splutters add both the dals. Cook till soft then add the curry leaves, red chillies,ginger, green chillies and rawa. Roast on low flame stirring at intervals till the rawa turns light golden in colour. Remove in a plate and keep aside.
In the same pan heat 1 tbsp oil add all the chopped vegetables and saute for a minute or two.Then add 2 cups water, salt and sugar. Cover and cook on low flame till all the vegetables are soft but crunchy. At this point add the buttermilk and keep stirring so that it does not curdle.
Slowly add the roasted rawa mixture and mix well so that no lumps are formed. Cook till the water dries then add the ghee and switch off the gas.
Remove in a serving bowl and garnish with corainder leaves and grated coconut.
