Homemade Vermicelli Upma Recipe
Ingredients:
1/2 packet vermicelli ( approx 200 gms / brand- emirates macaroni vermicelli nest)
2 onions chopped long
1 cup carrots chopped long
1 cup french beans chopped long
1 cup cabbage chopped long
1 green chilli chopped finely
2-3 string curry leaves chopped finely
2-3 whole red chiilies
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp mustard seeds
2 tbsp urad dal
salt as per taste
half lemon juice
some chopped coriander leaves for garnishing
fried peanuts for toppings ( optional)
Method:
Heat some water in a pan with 1-2 drops of oil.
Once the water boils add the vermicelli and cook till it is soft. Drain out all the water and keep aside.
Wash and soak the urad dal for 10-15 minutes. Drain and keep aside.
In a heavy based vessel heat 5-6 tbsp oil, add mustard seeds when it splutters add the washed urad dal ,whole red chillies, curry leaves, green chilli and sauté for a minute.
Add the onions cook till soft, then add the chopped carrots, french beans. Cover and cook till the vegetables are soft but crunchy.
Add the the remaining dry spices, salt, cabbage and vermicelli. Mix well, and cook for a minute or two.
Remove in a serving bowl, garnish with coriander leaves and it can be topped with some roasted peanuts.
