Homemade Macaroni In Pesto Sauce Recipe
Ingredients:
1 and half cup macaroni pasta
2 onions chopped finely
1 small red capsicum chopped into small cubes
1 small orange capsicum chopped into small cubes
1 small yellow capsicum chopped into small cubes
3-4 mushrooms. chopped into small cubes
1 small broccoli chopped into small florets
1/2 tbsp chopped garlic
some basil leaves ( optional)
1 tsp pepper powder
salt as per taste
200 gms homemade basil pesto sauce
Method:
In a vessel boil some water with 2 drops of oil and salt. Add the macaroni and cook till it is soft.
Drain out all the water from it and then pour some cold water on the boiled macaroni to avoid it from sticking.
Steam the broccoli and keep aside.
Heat 3-4 tbsp olive oil, sauté the garlic then add the onions and sauté till it is soft.
Add all the chopped capsicum and sauté for a minute then add the broccoli and mushrooms.
Saute all the above vegetables for only 2-3 minutes so that they are soft but remain crunchy.
Then add the macaroni, pesto sauce, pepper powder and salt. Mix well.
Remove in a serving bowl , garnish with some basil leaves and serve with garlic bread.
