Homemade Mix Veg Parathas Recipe
Ingredients:
For the Stuffing:
100 gms french beans
100 gms carrots
2 potatoes
1 cup peas (frozen)
1/2 tbsp ginger chopped finely
6-7 green chillies chopped finely
3-4 tbsp chopped coriander leaves
1 tbsp coriander powder
1/2 tbsp chilli powder
1/2 tbsp Kashmiri red chilli powder
1/2 tbsp jeera (cumin) powder
salt as per taste
For the Dough:
4 cups multigrain or wheat flour
1/2 tbsp ajwain (carom ) seeds
5-6 tbsp oil
salt as per taste
Method:
Clean, peel and wash the french beans,carrots and potatoes.
Chop them very finely into small cubes.
In a pan heat 1-2 tbsp oil and saute all the vegetables till they are soft.
Mix all the dry spices along with chopped ginger, green chillies and coriander leaves and cook for 2-3 minutes.
Remove from flame and keep aside to cool.
Mix all the above ingredients for the dough and make a very very soft dough by adding water as required.
Allow the dough to rest for 10-15 minutes.
Make equal size balls of the stuffing and the same size balls of the dough.
Take one dough ball flatten it and roll it into 2 to 3 inches disc then place one ball of the vegetable stuffing .Bring all the sides of the dough together to make a ball after removing the extra dough.
Dust some flour on the rolling board and roll into a round disc.
Heat a tawa and put the rolled paratha on the tawa .Cook on both sides by applying a little oil till brown spots are seen on both sides.
Serve this yummy mix veg paratha with yogurt and pickle.
Note : The same method can be followed to make stuffed parathas with filling of paneer, potatoes, radish. moong dal or cauliflower . Replace the mix veg stuffing with paneer, potatoes radish, moong dal ( to be slightly boiled and then mashed) or cauliflower.(as seen in the last image)
