Homemade Papad Spring Roll Recipe

Ingredients For Covering :
4 nos Papad plain or masala
Ingredients For Filling:
1 no small onion thinly sliced
1 small green capsicum/pepper thinly sliced
1 small carrot thinly sliced
1 /2 cup cabbage thinly sliced
1/ 2 tbsp chopped garlic
1 tbsp schezwan sauce
1/2 tbsp ketchup sauce
1 tsp vinegar
2 tsp soya sauce
salt as per taste
Method:
Wash and cut all the above vegetables into thin slices.
Heat 2 tbsp oil in a pan add the garlic and saute for a second then add the chopped onions and cook on high flame till translucent then add the carrots and cook for a second. To it add the capsicum and cabbage and cook on high flame till soft but crunchy.
Mix the sauces, vinegar, soya and salt and give it a good toss. Remove and keep aside for future use.
In a deep plate or bowl take some water . Dip one papad at a time in the water just for a second so that it is soft and easy to roll. Then remove it and keep on a plate. Put some vegetable filling on one side of the papad and then roll it tightly but gently. Fold and seal the edges by applying some water.
Repeat the process till all the papad are filled with the filling and then rolled.
Place the rolled papad in a greased baking tray.
Pre heat the oven at 180 C for 10 minutes. Place the tray in the oven and bake for 10 minutes then bake again at 200 C for another 5- 10 minutes or till the papad are brown and crispy. Alternatively the papad can be deep fried or put in an air fryer also.
Remove from the oven. Cut into half and serve hot with ketchup.
