Homemade Sabudana Khichdi Recipe

Ingredients:
3 cups sabudana (sago)
1/2 cup peanuts
2 boiled potatoes cut into small cubes
1 inch ginger chopped finely
2 green chillies chopped finely
2-3 strings chopped curry leaves
4 tbsp ghee / oil
1 tsp jeera ( cumin seeds )
1 tsp sugar
1/2 tbsp pepper powder
salt as per taste
1/2 lemon
some chopped coriander leaves
Method:
In a sieve wash the sabudana till all the powder comes out . Spread it on a plate and soak it in 3 cups water overnight or for 4-6 hours so that it swells and becomes soft.
Dry roast the peanuts and remove the skin. In a grinder grind it roughly in pulse mode.
Add the pepper powder, salt, sugar, lemon juice and peanuts in the sabudana and mix well.
Heat the ghee in a kadai and add the jeera when it splutters add the chopped ginger, curry leaves , green chillies and boiled potatoes. Cook for 2-3 minutes then add the sabudana and give it a good stir. Cover and cook on low flame stirring at intervals for 5-10 minutes till the sabudana pearls are translucent.
Remove in a serving dish and garnish with chopped corainder leaves.
Enjoy this yummy sabudana khichdi which is perfect to be eaten also during vrat or fast.
