Homemade Vegetable Cutlet Recipe

Ingredients:
4 boiled potatoes grated
1/2 cup finely chopped carrot
1/2 cup finely chopped french beans
1/2 cup peas ( frozen)
1/2 cup finely chopped green capsicum
1/2 lemon
2-3 green chillies chopped finely
1/2 tbsp chopped garlic
1/2 tbsp chopped ginger
1/4 cup chopped coriander leaves
2-3 tbsp chopped mint leaves
1/2 tsp turmeric powder
1/2 tbsp chilli powder
1/2 tbsp coriander powder
1 tsp pepper powder
1 tsp jeera (cumin) powder
1 tsp garam masala
1 tsp amchur ( mango) powder
1/2 to 1 cup roasted besan ( gram flour)
salt as per taste
oil for frying
Ingredients for Coating :
1/4 cup cornflour
1/4 cup madia
1/2 tsp salt
1/2 cup bread crumbs
Method:
Take a bowl mix the boiled grated potatoes, ginger, garlic, green chillies, coriander leaves, mint leaves and all the dry spices.
Then add all the finely chopped vegetables, lemon juice, salt and half cup roasted besan and mix together to make a dough. If the dough is still watery add some more besan till the dough becomes dry.
Make ablong or round shape cutlets of the entire dough.
Allow it to rest in the refrigerator for about 15 -20 minutes.
In a bowl make a slurry of medium dropping consistency with the cornflour, madia and salt.
Dip each cutlet in the slurry and then roll the cutlet with some bread crumbs.
Heat oil in a kadai and fry the cutlets in small batches on low flame till crispy and brown on both sides.
Remove onto a tissue towel.
Serve these yummy and delicious cutlets with green chutney and ketchup.
