Homemade Yam Sabzi Recipe
Ingredients :
300 gms Yam (Suran)
2 onions chopped finely
2 tomatoes chopped finely
1 green chili chopped finely
1 small piece of ginger chopped finely
2 pods of garlic ( optional )
few curry leaves
1/2 tsp mustard seeds
1 tsp red chili powder
1/2 tsp turmeric powder
2-3 tbsp oil
salt to taste
some chopped coriander leaves for garnishing
Method :
Cut the Yam into long piece and boil them with a little salt on medium to low flame till soft. Add 1-2 drops of lemon juice in the water. ( Ref: Tip # 18). When cooked drain the extra water and keep aside.
In a pan, heat the oil, add mustard seeds once it splutters then add the turmeric powder, curry leaves, ginger, garlic and green chilli. Saute it for a second and then add the finely chopped onions. Cook the onions till it is translucent. Once the onions are cooked then add the tomatoes, salt and chilli powder. Cook till you see drops of oil on the sides of the pan. Add the boiled yam. Cover and cook for another 4-5 minutes.
Remove in a serving bowl and garnish with some chopped coriander leaves.
Enjoy this tasty Yam Sabzi with chapatis or parathas.
