Homemade Yam Gravy Sabzi Recipe
Ingredients:
250 gms yam or suran
1/2 cup roasted peanuts without skin
1/2 cup coconut milk powder
1 tsp ginger chopped finely
1 green chili chopped finely
1 string curry leaves chopped finely
1 /2 tsp chili powder
1/2 tsp turmeric powder
1 tsp mustard seeds
1 tbsp amchur powder (mango powder)
1/2 tbsp jaggery
salt to taste
coriander leaves for garnishing
Method:
Clean, wash and cut the yam into cubes . Boil it in water till soft with few drops of lemon juice so that it does not turn black.Drain the extra water and keep it aside.
In a grinder make a fine paste of the peanuts.
In half cup of water mix the amchur and jaggery together.
Add half cup water to the coconut powder to make a paste of it.
Take a pan heat 2 tbsp oil then add the mustard seeds when it splutters add the curry leaves, ginger and green chilli, saute for then add the peanut paste, tamchur jaggery paste and cook for 2-3 minutes then add the chili powder, yam and salt. Cook for another 5 minutes .
Lastly add the coconut milk paste and some more water if required to get a semi thick gravy. Cook for 5 more minutes on low flame.
Remove in a serving bowl and garnish with coriander leaves.
Serve this yummy and creamy sabzi with rotis or rice.
