Homemade Meethe Chawal Recipe
Ingredients:
1 cup basmati rice
1 cup sugar
1/4 cup ghee
2 nos cardamom
3-4 cloves
1 tsp saffron powder or orange food colour
1/4 cup cashewnuts
1/4 cup almonds
1/4 cup black or green raisins
Method:
Clean, wash and soak the rice in water for about 30 minutes. In a pan take some water add the cardamom, cloves and saffron powder or food colour. When it boils add the rice and cook till it is 90% soft. Drain all the water and keep aside.
In a kadai or heavy based vessel heat half the quantity of ghee and fry all the dry fruits one by one first the almonds then cashewnuts and lastly the raisins. Remove them on a tissue towel and keep aside.
In the remaining ghee add all the cooked rice, sugar and the remaining ghee. Mix ,cover and cook on low flame stirring at intervals for 5 minutes or till the sugar melts.
Switch off the flame once the rice is soft and dry. Mix all the fried nuts in the rice.
Remove in a serving dish.
