Homemade Mexican Vegetable Wrap Recipe
Ingredients:
8 nos Tortillas wraps
1/4 cup canned black beans
1/4 cup canned corn
1/4 cup canned rajma (red kidney beans)
1 chopped onion into cubes
1 chopped tomato into cubes
1 chopped cucumber into cubes
1 cup chopped lettuce leaves
200 gms sour cream
1 small packet of tortilla cheese nacho chips
1/2 tsp pepper powder
salt as per taste
Method:
Open all the bean cans, drain out the liquid and wash them with water .Allow it to dry. In a bowl mix all the beans with salt and pepper. Keep aside.
Heat a non stick pan and cook the tortilla on both sides on low flame for few seconds only otherwise it will become hard.
Remove in a plate and spread the Guacamole sauce then on one side place some beans, onions, tomatoes and lettuce leaves . Spread some sour cream and tortilla chips over it. Place one end of the the tortilla on the filling and roll it tightly.
Another way of making the wrap is by making a half cut in the center of the wrap and placing the filling in the four corners of the wrap as seen in the below second image and then fold it as seen in the third image below.
Serve this yummy and healthy Mexican Vegetable Wraps with some guacamole sauce, sour cream and chips.
