Homemade Sindhi Koki Recipe
Ingredients:
4 cups wheat flour
5-6 onions chopped very finely
1 tbsp green chillies chopped finely
1 tbsp ginger chopped finely
2-3 tbsp coriander leaves finely chopped
1 tsp carom seeds ( ajwain)
1 tsp jeera (cumin seeds )
1 tbsp pepper grounded coarsely
1 tbsp red chilli powder
1 tbsp kasuri methi
2 tbsp annardana powder ( dried pomegranate seeds powder)
salt as per taste
1/4 cup oil
Method:
Take a bowl add all the above ingredients and mix well.
Only if required add a little water to make a very hard dough.
Immediately with the dough make balls of equal size.
Take a dough ball and with the help of a rolling pin roll into semi thick circular disc.
Heat a tawa and cook the koki on low flame on one side till brown spots are seen below then flip and cook on the other side also till brown spots are seen by applying oil on it. Flip once more and cook again on both sides till crispy. Remove and keep it on a plate.
Repeat the process till the dough is fully used.
Serve this yummy koki with yogurt and pickle.
