Homemade Thai Coconut Soup Recipe

Servings: 3-4 pax

Prep Time: 10 minutes

Cook Time : 15 minutes

Total Time: 25 minutes

  • Ingredients:

  • 1 cup broccoli florets

  • 1 cup chopped mushroom

  • 1/2 cup chopped carrots

  • 400 ml coconut milk

  • 1.5 tbsp green thai paste

  • 2 tbsp palak paste for the green colour

  • 1 tsp white pepper

  • 1 no green chilli chopped finely

  • 1 tsp finely chopped ginger

  • 1/2 tbsp finely chopped garlic

  • 1/2 lemon juice

  • 2-3 basil leaves

  • salt as per taste

Method:

  1. Clean and chop the broccoli into small florets. Then wash it properly.

  2. Wash the mushroom and dry pat them then slice into pieces.

  3. Peel, wash and cut the carrots into small thick pieces.

  4. In a pot or heavy based vessel heat 1 tbsp oil then saute the garlic, ginger and green chilli. Then add the thai paste and 1 cup water to it and cook for a minute . Add the chopped mushrooms, broccoli and carrots. Cover and boil on low flame till they are soft but crunchy.

  5. Add the salt, pepper powder and palak paste. Boil for another 2-3 minutes thean add the coconut milk and basil leaves and boil on low flame for 5 minutes.

  6. Remove from flame and pour in to serving bowls with a little lemon juice and basil leaves.
