Homemade Okra ( Bhindi) Sabzi Recipe
Ingredients:
500 gms bhindi ( lady finger/ okra) chopped into big cubes
2 big onions chopped finely
1 green chilli chopped finely
1/2 tbsp ginger chopped finely
2-3 pinch asafoetida
1 tsp jeera (cumin) seeds
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
1 tsp jeera (cumin) powder
1 tsp garam masala
1/2 tbsp amchur (mango powder)
salt as per taste
coriander leaves for garnishing
Method:
.Heat 2- 3 tbsp oil in a pan add asafoedita and jeera when it splutters add the turmeric powder, green chilli and ginger saute for a second.
Add the chopped onions and cook till it is soft.
Add all the dry spices and salt leaving out the garam masala and amchur powder. Saute the masala on low flame for a minute.
Add the chopped okra to the masala.
Cover and cook on low flame stirring at short intervals.
When soft add garam masala and amchur powder .
Cook till completely dry .
Remove in a serving bowl and garnish with coriander leaves .
Serve with chapatis or parathas.
