Homemade Cucumber Boats Recipe

Ingredients:
2 big cucumbers
1 /4 cup hung curds or labneh
1 small onion finely chopped
1 small tomato deseed and finely chopped
1 small green chilli finely chopped ( optional)
2 tbsp chopped coriander leaves
2 tbsp chopped pudina/mint leaves
1 tsp pepper powder
salt as per taste
Method:
Wash the cucumbers and then cut it from the top into half. Scoop out all the pulp from the cut cucumbers.
Take 1 cup thick curds and hang it for 3-4 hours till all the water comers out.
In a bowl add the hung curds and mix the salt, pepper, green chilli, pudina and coriander leaves in it.
Take a scooped cucumber then fill three fourth of it with the hung curds mixture and then top it with some chopped onions, tomatoes and coriander leaves.
Repeat the process for the remaining cucumbers also.
Alternatively the cucumbers can also be filled with chopped potatoes mixed with salt, pepper, chaat masala, green chilli, pudina and coriander leaves and topped with sweet chutney , green chutney and some nylon sev.
